Adjusting game settings?
I may be spoiled by games like V Rising, but is there a way to adjust the settings of the game to make it harder or easier, more or less grindy, etc? I usually play solo or with very small groups, so I would love a way to do things like reduce resource requirements for crafting, increase resource drop amounts, reduce the difficulty and number of enemies, adjust what gets dropped when you die, turn off the thing that prevents you from teleporting with certain resources, etc. Mainly I'm just looking for ways to reduce the insane amount of grind and dead time there is in the game. Are mods the only way to do this?

You pretty much want to cut all that out that makes the primary game loop of survival games. There will be not much game left when you are done with this.
Just a friendly warning.
Edit: And yes, Valheim+ can do most of what you want.

As others have recommended, there is Valheim + for starters, it's not without it's flaws.
After 1500 hours in vanilla the game got stale, so i've been playing with mods for the last 400 or so hours. Valheim +, Creature level and loot control, Custom raids, Drop that, plant everything, mass farmer, better trader.
Running around in a world with 5 star enemies makes for a unique challenge. Custom raids is also fantastic once you sort out the configs.
As always, YMMV

There are currently 1566 mods available at the Thunderstore (they're all free even though they all it a 'store'.)

The only way is modding at the moment as already suggested. The easiest one you can use is Valheim Plus. It's basically "set and forget" and it's kept up to date by the mod devs who made it, particularly after patches and game updates. I use it for a few QoL things but you can change just about everything about the game in it. For what you've indicated you want to change, this can be done with V+ no probems. It's very easy to set up too.
If you want to spawn in a surtling spawner in the black forest you can use a devcommand to do it. (Don't recommend it though. LOL) But yes, if you don't want to use any mods, then you can use the devcommand console to spawn things in if you're playing locally on your computer.

Yeah I am totally for using mods to have that kind of freedom. But for the sake of forward compatibility I'm waiting until there is a more complete game to mod off of.
I've dabbled with mods in other games more than long enough to have a thorough understanding about how I can alter my games without ruining them for myself.
A thing I would like is a flatter power curve. I often feel like I'm stuck in this awkward place in progression where I feel overpowered for my current biome but still undergeared for the next. At any one time there are too few kinds of mobs that fall in the sweet spot where they are not so weak that they can't outdamage your health regeneration, and not so strong that survival becomes more about abusing their limited pathing capabilities.
But I would probably also put fire geysers in the black forests too. Nobody needs coal and cores as badly as someone in bronze age does.

Not like V Rising, you can't adjust damage/hp/resources in game/server files.
Best we have in Valheim is console commands, there are a lot more available in Valheim than V Rising. A quick web search should yield all the command lines, including how to enable it.
