I'm not going to try to change your mind, but I'd like to share my experience.
When I first started playing, I ran out of stamina extremely quickly. When I realized that stamina was a problem, I looked to see what could be done about it.
Stamina regeneration seems to be a percentage; whether you have 50 stamina, or 200, it takes about the same amount of time to "fill the bar" from empty. Thus, the larger your stamina pool, the faster it will regenerate.
Eating food buffs your max stamina and max health. There's a "fork" icon on the food to help you determine at a glance how the food will affect you; yellow is mostly stamina, red is mostly health, and silver is balanced. Once I started keeping my 3 "tummy" slots full, stamina became less of an issue... because I had more than double the base amount to work with.
The resting/rested effects also have a dramatic impact on regen rates. If you are "rested", then your stamina regen is twice as fast as if you are not. If you are currently "resting", stamina regen is tripled. These effects stack; If you are rested and resting, your stamina regeneration occurs at 4x the normal rate.
This means that if you know you're going to be standing in roughly the same place, using your stamina constantly (eg, when mining out a copper node), it makes sense to make sure there's a campfire and a roof nearby; if you are resting and rested, every time you stop swinging your pick your stamina bar will almost instantly refill.
Sprinting everywhere uses stamina, as does "doing stuff" (eg, attacking, dodging, swimming, or using a tool). Once I stopped using up all of my stamina sprinting around like a madman, I started having more stamina available for those other tasks.
This game seems to be designed to kick "run-and-gun" players in the shins, while rewarding those who pay attention to mechanics and play in a manner that accommodates the built-in "limitations". Without limits, there's not much challenge... and without obstacles to overcome, there's no satisfaction.
Like I said, I'm not going to try to change your mind; I'm not the "fun police", and there are mods to do what you say you want to do. You do you.
Me, though, I gain a certain amount of satisfaction from knowing that I've overcome one of the game's obstacles... instead of cheating my way around it.

If there was no stamina, there would be no reason to not constantly run and roll around avoiding every attack. You could grab an atgeir and spam the spin attack without end. Over 2/3 of the food in the game would be useless. Over-encumbrance would mean almost nothing.

Stamina is not the issue it's the way stats work. HP and stamina amount is based on food buffs which isn't a great idea. A lot of other survival games have food just heal HP which honestly should be the case here and not influence amount of HP and stamina. So if you run out of food buffs your HP and stamina turn to ♥♥♥♥. I didn't like this system when I first bought the game and still not a fan of it. The only option is to mod it to be different.

If stamina didn't exist, enemies as well as debuffs would have to be tougher and more meaningful, otherwise i could just infinitely alt attack with an atgier.

Well said. But I too, am very keen on Valheim easing up a bit on the shin-kicking. Stamina and eating/resting is one, bagspace is maybe my biggest issue. They could fix these some QoL issues with minor tweaking, they don't have to throw everything out the window. Like, with a few more options and a little more content it could be a whole lot broader and gain/keep more players. After all this time they should grab some low hanging fruits before it all rots. OP's vote for no stamina would change the game totally though, and is not very realistic, methinks.

Can this be confirmed? I always thought regen rate was static regardless of your max possible stamina. Ergo, I always felt that having high stamina was great for the beginning of a fight, but then it became meaningless since the bigger the bar the longer it would take to regenerate.
So your claim is that instead of regen being "+x points per second" it is actually "+x% of total per second". I need to test that!

It would appear that the more stamina you have remaining, the slower your stamina regenerates. To put it another way: The lower your bar, the faster the stamina regen.

I may be misinterpreting your post, but you have maximum stamina regeneration when your stamina is 0, and the regeneration decreases as your stamina bar goes up.
The key takeaway (IMO) is that, once you're out of stamina it is irrelevant how much stamina you started with (your max stamina).
Eating high-stamina foods gives you a larger tank, but it's filled with the same size hose, which means you can go longer before it's empty, but once it's empty, it's the same as having a smaller tank until you wait around for it to refill.
As to the OP, you're stating an opinion. It's not up to us to change your opinion. That's like asking us to convince you that pizza is not your favorite food.
My opinion is that if they removed stamina, the game would be braindead easy, so they'd have to replace it with some other mechanic that might be worse.

I like the idea of the stamina mechanic, I'm not experienced enough with it presently to offer an opinion as to what changes if any are needed. It is a reasonable and logical part of the world.

I do not think it should be removed but with mods on my server we made it so it immediately starts to regen and it regens 50% faster.
Also, using the hammer and the cultivator take no stam and swimming and jumping stam consumption reduced by 50%. We think this makes the game feel a lot better.
Hopefully one day we will have settings with lots of sliders like most survival games.

so many games have stamina in some capacity or another, skyrim, no complaints, fallout, no complaints, warcraft no complaints, breath of the wild no complaints... etc... why do so many complain about this game having stam?
