why on earth does it feel so wonky, why cant they just remove the structure requirements for a roof or drastically decrease it, its horrible

Once you get corewood and stone, it's quite easy to make a massive building.
It's actually a bit part of the fun, starting out with a small hovel and progressing to a castle.

Once you can throw a couple iron reinforced beams here and there it increases the possibilities exponentially.

Making sweet structures that make sense is part of the fun. Gotta learn how to use support beams, or just download a mod to remove it anyway.

The game is inspired heavily by Viking mythos and Vikings did not live in massive castles they lived in small 1 room farm houses and communal long houses. You didn't start seeing larger constructions until after Christianity started to spread through Scandinavia.
