I went at him with a level 2 bow, fire arrows, troll hide + a bronze helmet. I ran veeeery fast.

The arrows were your big mistake. Get a mace.

Well... Given that I've only just built my first house after starting over, I'm probably a way off any building projects! But I do have a question - when do I get to build with stone? I want to build a castle!

so far i got about 5-6 iron chests each full of stone and wood

Nothing at all. Stone and wood are the easiest resources to acquire and I'm sure I have tons already.
I am certainly not going to be building any 'treasure room'. That seems like a pointless exercise given that all of the gold, baubles and jewelry I've gathered are completely worthless o.O The pit that I dug to dump all of that is as good a vault as any I could build.
