Yup it's definitely useful to dig down a bit around the deposit in order to unearth all the copper. Be sure to use the Antler Pickaxe for clearing away normal ground and using better pickaxes on that actual deposit - or have a nearby workbench/forge/portal for repairs with some chests for storing stone, copper and mob drops in.
edit: Use the portal for moving non restricted resources before running back with copper, tin, etc... Stone is extremely useful.

yeah almost every copper deposit goes all the way down to bedrock, some even have chunks down in the bedrock

Just because you can, doesn't necessarily mean you should, though. It's a lot less effective to mine those deeper veins. (More time consuming). And it's going to end up like a huge scar in the landscape if you don't use some of that stone to fix it.
But... that doesn't mean you shouldn't, either, just means it might be worth considering.

Game restricts you to only 8 meters or so below ground level so I dig down to that depth totally encircling the deposit, then mine it all out. Leaves a nice hole where you're safe from trolls and can easily kill them as they stand on the edge throwing rocks at you.
I've considered building a base down in one to act as a waystation when on longer trips.

My thing is to make a base surrounded by deposits in the hole of a central one. Makes it so you don't really have to transport the copper anywhere. Game restricts you to only 8 meters or so below ground level so I dig down to that depth totally encircling the deposit, then mine it all out. Leaves a nice hole where you're safe from trolls and can easily kill them as they stand on the edge throwing rocks at you.
