When you start Valheim, check the Graphics options in the game Settings. Sounds like the same problem I had the first time I started the game. The options to select and existing character or create a new one should appear at the bottom of your display ir the game is set to the native resolution of your monitor and full screen is selected.

sometimes GUI scale removes buttons too so check both GUI scale and resolution
