thinking about buying this
is it worth a buy if im planning on playing it solo only ?

Sort of. To me the game is definitely designed with the idea of playing with friends in mind first. But its still perfectly playable solo you will just be doing a lot of grinding because you won't have anyone else to help you get materials.

can i tone down the grinding with mods or cheats (strictly singleplayer of course)

Yep, and there's way less grind solo than with few people since you don't have to gather X times more resources while playing with X amount of people.

i finished all dark souls games on ng++ i think i can handle vallheim solo, the thing that bothers me is the grinding ? so i ask again can i mod it to be less grindy

The entirety of the game is fine to play solo. The bosses and even the later bosses arent much of a problem with a minimum of planning, like making a small arena for the fight or using the right type of arrows, staying on top of keeping your gear upgraded and actualy making an effort with the food preparations.
At most ppl got a valid complaint that the experience is going to feel a bit slower, but the difference between killing a boss in 2 minutes or 4 make little difference.

Sure, if you want to invest 100 hours and move from location to location killing enemies, mining and killing boss, rinse and repeat its nice.
Just never die or you will hate the game.
Another problem is that building will bog you down since you need tens of hours of farming to build what you need.
Sadly the best part is the first 10 hours and the last 10 hours.
I wouldnt play it alone, it gets weird after a while with all the inventory management

You compared totally different games. This is nothing like Dark Souls. Difficulty is not in any way skill based in this game. Combat is very basic I would say it's like a mobile game.I'm so happy that my old save works and i lost nothing of my stuff. Is it really possible to play the whole game alone? If you were expecting to spend 10-20 hours on the game and move on, sure then the grinding can be too much.
Building is fine for the most part although i can see how annoying it can feel to spend 30 minutes collecting wood before building anything of permanent value.
This is much more of a 100 hour game and expecting anything else is weird.
A players unwillingness to put in any kind of effort is not a valid excuse.

If you spent your time only focussing on rushing down the bosses in an optimal matter and making bases that look like basic shacks, then you COULD clear all the bosses in under 100 hours but then this game probably isn't made for that experience. Best to play something else of Dark Souls genre.

Can I play this game by myself and, throughout the duration of that game (based on game content, not losing and restarting), enjoy the base building and survival aspects from beginning to end?
As in, I'm looking for a survival focused game that includes base building. Does this game fill that niche?

The game has nothing to offer besides building which really is fun, but the stamina nerfs made that horrible experience now. Waiting for stamina to refill so you could jump to build something is nothing but a waste of time.

It really depends on how in a hurry your are. As opposed to some other games, you are never stopped in your actions because you just lack some direly needed materials, and then your very actions have to focus on collecting said materials.
To give an example from the stone age in game: you can either keep on exploring whole low-level areas further away from your "base" (Meadows, Black Forest), while collecting the materials needed to upgrade your gear to finally access higher-level areas more easily (or more reallistically), all the long, OR you can wish exploring any area "near your base" as soon as possible, whatever their difficulty in term of fights, let alone survival, and in this case, you need to repeat actions in order to collect said materials.
In the fomer case, resource collecting can be defined as a relativelly seamless process, though you need to find a solution to empty your inventory always, anyways, and I wouldn't call it "grinding". You could still call it "grinding", if you want, but only an "easy grinding", then. If you want numbers, the weight allowance makes it so that you are limited to 2 stacks of raw, heavy materials in your character's inventory (wood, stone), in absence of any other transport mean in the stone age. It's up to you if you absolutely prefer exploring and returning to your base every time you are full (with like 1 stack of heavy materials seamlessly collected during your run, but could be more), OR you best prefer to set up a serial of noria trips, returning only 2 stacks of heavy material each time, plus whatever resource you might find in your way.
The same if you are in a hurry to build a splendid and vast base, as you can see on some videos. Do you want all the required materials in but a couple (or a handful) of in-game days, prior to start building, or as the result of in-game weeks of exploration? The difference is in the amount of grinding you'll perceive in real life (what you essentially do during your gaming sessions).
