It definitely adds some nice atmosphere, sailing and weather is just like that. Sometimes you will want to do something, but the weather disagrees. That’s why you find other stuff to do until it gets better :>

I can accept the inconveniences of weather and daytime, that's just part of the game.
What annoys me is in the plains' "ethereal fields", when you smack something with
a blunt weapon that makes it die in a distance, but you are still too busy fighting and
can't track where exactly the loot lands, the sparkle of the loot is so faint against the gleaming fields that I miss a lot of stuff. If I happen to return there at night it's a whole lot better to see.

I go weeks without seeing fog.

You may just be unlucky. I certainly don't get it every day I sail, and I've yet to teleport in this game so I sail a lot. It does seem to favour certain biomes, though, unless I'm imagining that. Every time I sail over plains it seems liable to fog.

It does make you wonder what's been left for the Mistlands, doesn't it? And it's a very opportune fog that tends to spring up just as you are approaching a new shore. Sometimes it seems less like a fog than a smoke screen.

One of the problems is that there are no true seasons. I could live with frequent fog if it were like in the real world, more common in some seasons than in others. Remember the ballad of Sir Patrick Spens, "this ill deed done to me, to send me out this time of the year, to sail upon the sea."
