where is the game saved
if I uninstall the game and don't transfer any files before formatting ssd do I lose my game saves or is everything stored in a cloud?

Cloud should save it? I wouldn't do it now though since Tuesday is valve server maintenance day and you could bork it.
Check out some guides on backup and restore to be sure
There should be separate world and character files. Don't think you have a world file if you play on a server?

I always keep a back up of the Valheim folder inside the app data folder GunsForBucks mentioned. Some folks have lost saves, so it might be preferable to that. That would really suck...
