Once I had it levelled and it stayed nice and even for 3-4 days, until I grassed it over, which is the last screen shot. I levelled it out and it seems to be staying, so I am taking no chances, "No grass for you!"

Yeah, there's a maximum offset from the original terrain, so if you dig all the way down you'll just recreate the original shape at a lower elevation. You can raise it all slightly, build something to disguise the slope, or use mods to remove the height restriction.
