That's not how that works, you can slap the Early Access label on any dev stage you want.

Is Valheim feature complete? If so then it is in Beta.
If not, it is in Alpha.

Neither disqualifies it from being in Early Access.

Technically I think it's still alpha because it is not feature complete (at which point it becomes a beta). These terms used to have very specific meanings on software development but now they get thrown around pretty loosely. Early access really changes the way something is made, normally an alpha wouldn't need to be polished and playable for example.

the game is version 0.15something.. still in beta.

that game Session is in pre-alpha, version 0.0.0.28 yet its in EA.

The concept of alphas and betas is basically irrelevant now since everything is practically agile, but if you define alpha as "sometime between when testing expands beyond unit tests and before being feature complete" and beta as "feature complete and both black-box and white-box testing are being conducted on the complete set of features, but before release" then the game is in fact in alpha right now.
