Mysterious server rollback
On multiple occasions after not playing on a world for a couple of weeks I will login and find the entire server rolled back to a much early state, I have no clue how or why this is happening

Server as in dedicated server or local/friend co-op game?
If dedicated server, make sure your world is saving. It saves every 20 minutes. Check the time stamp on your server files in Appdata. Try manually saving as an admin via console.
If local/friend co-op, try turning off cloud save in the Steam Launcher settings.
