Cheese the boss.

First make sure you have a bow and lots of arrows, and food with a full belly.
Then build a double walled shack with a ladder and lookout that you can fire from.
Don't spare any wood, make it fortified with a spot to LOS the bosses lightning attacks.
You can repair the wood as he blasts it away.

Lure the boss to the shack, and fire at him until he dies.

How do people actually have an issue with Eikthyr? He's the tutorial boss, for ♥♥♥♥'s sake. I can literally murder that damn deer within three minutes with a level 1 Flint Spear.

He only has three attacks, all of which are extremely easy to dodge with rolls. Hell, if you have full Leather Armor he should barely even scratch you WITHOUT blocking, and shields will also stop him from doing like, any damage.

Pretty much. His lightning attacks have really severe damage falloff, so as long as you keep your distance even if he does hit you it will more tickle than hurt

Make sure you've eaten 3 foods, have a shield and a weapon before re-engaging him.

Start a new world. You've learned valuable lessons for your next attempt. You'll be able to recraft all your gear in no time.

Everything up to that point can be easily remade. Remake whatever weapons on the spot near the summon stone. retry

Why don't you just continue without fisting him? Eikthyr is spawned at her altar. So just continue to build yourself up and when you're ready, go back there to summon/kill her.

Alternatively, if you started not long ago, then just create a new world.

Heeeey... :) Just kill more boars and deer. Make leather armor (one more time), And kill him with bow. :)

Unless you built like right next to his altar you can just walk away, get some better gear and then destroy him.

I assume you have led him close to your spawn point so that when you respawn he attacks immediately.

Run!!! Dodge his ranged attacks and lead him away some distance. It works best if you lead him to a wooded area. Lose him in the woods, then circle back around to your spawn point out of his sight.

Elkthyr will remain close to where he last saw you. You can take your time gathering materials in other locations and crafting the weapons and armor you need to beat him.

Once you have done this, go back to where you left him and kill him. A bow and arrows work pretty well especially if you can craft some fire arrows. You will need feathers, wood, and resin to make them.

I like using the bow because you can attack him while remaining out of range of his melee attacks. If you prefer melee, learn to dodge and craft a shield and a melee weapons. Elkthyr is weak to piercing damage so a flint spear does more damage than a flint axe or a club of the same level.

Bow and FIRE arrows, and some dodging and running on the outskirts of the spawn are all that is required. You can also modify the terrain near where the spawn happens to make it more favorable to you. Camp fires, obstacles, raised ground etc.
