Using Draugr entrials to make sausage? That's just nasty, especially when there are deer and boar insides available. Seriously, what's wrong with these vikings?

you already use boar meat too , so there is not another swamp beast apart from leechs to use another ingredient , and blood bag its already use for 2 meals and 2 meads , use it for another food will be a lot of farm , so maybe thats why devs uses zombie guts

All we know is that Draugr lived on Valheim before Odin went there to turn them to dust, so there is no way to know if they were actually humans or from a different species. Humanoid bipeds for sure but anything more than that is simply speculative.
