Start over, the new stuff will only spawn in zones you have not been yet.
There are mods that spawns them in for you, but thats mods.

A lot of new house stuff I think is tied to tar. New plains enemy drop.

Crystal walls crystals are dropped from stone golems.

The tar pit drops tar, so its not only the mob that drops it.

There is a mod for reverting explored areas so they can generate the new stuff after content updates. https://www.nexusmods.com/valheim/mods/1485
