What I found truly fun was to beat up the strongest beast of each biome with the best armor and weapons for that biome at Lv1 and without using any powers.
The trol was the hardest one to me.
It also helped a lot when I started a new character, because I had the experience to defeat them in the worst conditions.

If you're starting a new run, consider a seed that is different from what you normally play - like at the moment I'm doing a 'pangea' style seed (GONDWANA). Large land masses without mods. It poses some interesting challenges, overland travel is sometimes faster than sea on such a map. There is also a bit of an unusual crunch in the bronze age - copper isn't your limiter.. tin is, because there is much less coastal Black Forest regions. I'm sure there are more differences yet to discover.

That sounds cool In my current world I am building what I refer to as The Great Wall of Valheim. It's a wall six meters wide and at least eight meters high that runs along the borders of three biomes and hope to take it up into the mountains before I lose interest. I'm not spawning in any of the stone.

sail to the ashlands and bring back some flamemetal ore... It was epic doing that on a permadeath run. Surtlings can sink a longship in seconds.

i started building a tree house walkway in the swamps, using the iron in the swamp to make wood iron poles to support the large distance between the trees. the big swamp trees are unbreakable and count as "grounded" for building.
in every seed i sail around the edge of the world looking for outcroppings of land that are close to the edge so i can build a lookout as close as possible, with the goal of looking over the edge.

If you've beat all the current bosses etc with one character, you can check out youtube for all sorts of challenge runs (passive, vegan, knife only, naked, etc etc.) to try.

I've found perma-death runs a lot of fun, the game is totally different when dying equals end of the run. Then there are various challenge runs, or as @John above shows, invent your own.
I'm thinking of doing a Roman-esque 'March of Civilization' run where I'll do my best to turn Valheim into a cross between a tower defense game and '"Sherman's March" (referring to US Civil War not tanks!) advances followed up by building roads, bridges, and small elevated forts along my paths of advance.
Really depends on what you find fun. Maybe you'd find a 'Build Valheim's tallest diving board challenge' fun instead of combat related challenges?

-You could go for a completion run, every weapon, tool and armor fully upgraded
-Personal chest full of valuables, 2 stacks of gold, stack of amber, stack of amber pearls, stack of rubies and a full stack of necklaces
-Every trophy in the game in a display room
I'm guessing it's grindy but to some people that is fun.
