Work benches, camp fires, torches, fermenter, kilns, and so on create a 20 meter no spawn zone around them. (Simple structure parts like walls and roofs do not) It's why you want the objects spread out around your base or walls or fortifications are useless. Like if you have a wall a torch ever 30m or so along the inside is a good idea as it also creates a buffer zone between the wall and potential spawns.
Note, these prevent spawns within 20m but do not prevent mobs walking in after spawning if they have an open path.

Deer will eat carrots and turnips if you field is not enclosed by a fence and you have not sited the field within the active radius of a workbench to prevent them from spawning inside the fence.

You pick them and then replant the fully grown plants to grow them into seed producers.

No. You plant seeds for veggies. You plant veggies for seeds.
Except barley and flax, where you just plant it for more of it.
You can keep everything in the ground as long as you want, it won't go bad or go anywhere.
