A moat works too! Only thing lacking is a drawbridge but you can always hop across.

do you just use 1 line of trees, or do you stack them a bit deep?

By the time I get to it I have a couple hundred seeds, so I go three deep, staggered

I use the same tactic. A ring of trees just outside my trench. Every once in a while, a troll will fell a few, easy to replace....

It was a bit ago but I think it was every 3 to 4 steps

Nope , only crops are an issue for enemies , trees grows normal anywhere

It's so dreadful when you see an invading Troll take down an entire field of baby carrots you just planted. Once I get carrot production up and running, I'll stash 100 seeds in a box in my fortress, just in case they all get smashed I can start again faster. That said, when the invasion comes, make sure you kite those guys around and don't lose aggro, if you can. That's when the mobs start doin' real damage... when they can't find you (in their circle of doom)!
