Unity Crash 2020.3.33f1_915a7af8b0d5
Updated my driver, also tried to change my NVIDA default setting, uninstall, reinstall... nothing is working - any ideas? When I try to launch the game the Valheim logo appears with a red exclamation point giving me the error code above in the title.

I've had a few unity crashes but game was up and running - rather random. Turning off steam overlay seems to eliminate it so far.

Tried that again, still no luck for me :( I've had a few unity crashes but game was up and running - rather random. Turning off steam overlay seems to eliminate it so far.

That sounds like a mod issue. You can try a clean install. That should get rid of any corrupted or modified files, old mod residue, etc.
Uninstall the game via Steam, then go to the install directory, default should be:
C:\Program Files (x86)\Steam\steamapps\common
If there is still a Valheim folder, delete it manually (this will not affect your saves, they are stored somewhere else).
Reinstall the game via Steam.
[Edit: If you have a mod manager, you can turn off all mods and try to find the one that's causing problems.]
