Yeah you've got a point, but Im new to this game so I feel other more experienced players can help me learn the ropes,

Other players definitely could help you. The game isn't too complex but some experienced coaching never hurts.

You can open up your own game to other players who can join you on your server (password protected so randoms can't join) if you can't find a server that you want to play on. That way you can maintain your world and characters in case the server isn't kept online for a long time.

Send me a friend request and if/when I have time later today or tomorrow I'll make a new character and join you. I'm not an expert, but have over 200 hours so I've got a half decent grasp of the basics.

You can absolutely go solo, most of my play time is solo, but the game is aimed at small groups playing co-op. I kind of avoid servers, though, because who knows how long they'll be online. Don't want to lose hours of progress only to have the server disappear.
