It doesn't make sense for trees to drop unsustainable amounts of seeds

I think that all trees in Valheim should drop A LOT of seeds. But to keep fine wood rare birches and oaks should take much longer to grow instead. This would be more realitic as the average tree (if it is the right season for seeds) has hundreds to thousands of seeds. Also, trees with harder wood generally take longer to mature.
Then, if seeds could be in as large of stacks as gold, and be used to craft leaf piles (as a sort of stand in for all the greenery that falls off trees) people could create an autumn effect. I think they should be suject to decay however, so leaf piles would go away unless indoors. This way extra seeds would get used up and not just become another item that needs to be thrown away.

I wouldn't mind upping the seed drop rate, and I like the leaf pile idea for decor purposes mostly. Not sure I'd want them to drop a bunch of seeds I have little use for though. I just wish I didn't have to chop down 15 oaks to only get 2 oak seeds (when I need 3 oaks to finish the landscaping I'm doing) while I can make a literal forest of beech trees from the seeds I've gathered along the way to even find those 15 oaks.

Remember, an Oak tree will take 40-50 years to grow rather than 4-5 game days. Trade-offs have to be made. Besides there are millions of trees in instance. Also you are suggesting that seed would drop for 10 days in every 365...
