Godly Wolf...
So I accidentally spawned a godly wolf when trying to spawn some wolf meat and now whenever I kill it, the game freezes.
The wolf does an insane amount of damage and I need to use the debugmode to kill it.
I typed in "spawn wolf meat 20" and then this wolf appeared and one shot me. I then came back and tried to kill it myself, and got thrashed again. Then I used the "god" mode and I was finally able to kill it. As soon as it dies, the game crashes.
Is there any way to unspawn a mob? Or any other suggestions?

So unfortunately, you have discovered one of the ways that some people, in the earlier days, used to grief servers.
Summoning in a high level mob and killing causes the game to crash due to the amount of "loot" that is suddenly being deposited into the world all at once...
Using /killall is NOT the answer here... will still lag out and crash if it is killed.
I could be wrong but, I don't believe there is a way to delete it, and think you would need to rollback your server to a previous save (prior to the summoning)

Failing all else, you can dig a pit, and drag that wolf into the pit so it can't get out, and then leave a marker on your map labeled "avoid" or something to that effect and then just forget about it I guess. try to put the pit somewhere you don't frequent and can avoid altogether going forward.
