Starred mobs just become more common the further you venture away from center(spawn) and that is still rng that gets factored when mobs spawn.

Like others have said, there isn't any seed difficulty native to the game. Seeds will have nothing to do with monster density or strength unless you mod for it.

The closest thing to difficulty is how large the nearby biomes and which they are and how far away your bosses are.

Going away from the center, getting more thick fog while sailing is annoying. Almost ran my ship into 3 lox on the water edge. Found really strange area. Narrow river for boat to fit with little room to steer in. Mist lands-mountains-black forest. Froze to death from sailing through the mountain area. About 25 minutes to sail with karve to get back to my body. Had the Elder shrine really close to plains.

First seed I got was huge land mass. Had meadows, black forest, swamp, large mountain range (2 different ones) and plains.
Second seed is a lot of smaller island with rivers splitting them apart. Swamp and plains bit more away. Mountain range are small also. Starting island have meadows, black forest, 2 tiny mountain areas. For the dock area, unaffected by storm waves that expose low spots.

Your second seed sounds interesting ,do you mind shearing it as most seed's i used i never seen anything above 1 star !

A big starting island with multiple biomes and boss locations and trader would make a map a lot easier.

Having locations to build that are more secure like islands would also make it easier.

On the opposite end, maps that have a small starting island, and irregular biome spawns can make a map actual hell to play.
I have had plenty of maps with a tiny piece of Plains biome hidden between meadows or blackforest. Allowing of nasty enemies Deathsquito to spawn, while hidden by the trees and hardly visable on the map.

Maps are generated random as mentioned bassed off a seed, so what you get is random. You cant set dificulty options right now, and map generation does not take this into account.
You can however use someone els map seed, by copy/pasting it into the seed text box, when making a new map.

I have a pretty decent starting map right now that you can check out if you like.

A thing to note on this map, there is a troll cave relatively near the spawn, in the meadows. It does not actualy have any trolls nor attract new ones. So dont worry about that.

The map has;
A huge starting island
Lots of meadows and blackforest all over.
Swamp and mountain biomes with quite a lot of Iron.
No Plains thats hidden away, that i could find atleast.
There is plains on the starting island but behind a swamp biome.
Multiple boss locations, and a trader also on the main island.
An inland sea near the spawn, that is connected with 3 paths for boats going 2 directions

I don't believe there is such a thing as Seed Difficulty Setting (or Level or Rating, etc.) Seeds are randomly generated. Thus, each is better for some things and not so good for others.

You could say that a lot of people have Seed Difficulty Opinions and that is all it would amount to.

There is no such thing as a "seed difficulty setting". It's just that some seeds are easier especially for new players, and some are harder, if you're not used to the game already.

I must say that I really lucked out on my very first seed. Larger continents, the start continent was mainly meadows, but black forest and mountains were not too far off. Trader location pretty close to start continent.

Location of third and fifth boss not too far apart, but a long way to go from the center. That was the only "hard" part on this seed. Other than that, I can wholeheartily recommend it to new players.
