Changing creature design is pretty common in games being worked on. As for the "problems" that you complain of you didn't exactly specify those to there by compare to creature design changes either.

Everything is a work in progress. I'd say overall not to fret over any of it and ground your expectations for a 10 person team accordingly to prevent unnecessary stress for yourself.

I wanna be very direct here. Updates that get released are finished things their working on. That doesn't mean they are not working on other things. Ignorance is not bliss.

It's like having pages and pages of things to complete and then the ones that get finished first are usually implemented. Also, other major changes and game fixes are usually released in major patches. Also the game is still in beta. Also, the dev's don't really seem to have problems they made the game. they work on it. they made money from it. zounds of people enjoy it. IMHO it sounds like you're the one with the problem.
