Strange:
Plant a carrot and get seeds.
Plant seeds and get a carrot.

What I have expected is some kind of crafting table, to extract seeds from plants, like in real life.

Why ? It is absolutely like in the real life. When you plant seeds of the carrot, it first year poduces the root (red carrot). When you need a carrot seeds, you must left these roots in the ground 1 year more. This second year it produces seeds, but the root (carrot) is useless already - it was consumed for the seeds production.

The edible food plants into seeds, the seeds plant into edible foods. Overall it's +1 item per successful crop. Spend the first few planting cycles just recycling the food and seeds, and let exponential growth do the rest.

Look into your hoe.

You can plant the carrots (and other veggies) with the hoe cultivator as seed plants. Look at the build menu of the hoe cultivator.

using your hoe wont help at all.
Try using cultivator. Right mouse button brings up cultivator menu where you can select seeds and veggies. Once you pick up carrot, you can plant it back for seeds (1 carrot for 3 seeds).

No, you get 3 seeds from one planted carrot. That's the way you increase your supplies.
For example, you find 3 seeds in BF and plant them. When it grows you will get 3 carrots. Now when you plant those 3 carrots, you get a total of 9 seeds (3 per carrot) which will later produce 9 carrots, etc.
