as far as I'm aware, not many skills maxed out are that great anyway. Except maybe the bow.

Running and Bow Skill where my first on level 100 (and they’re worth it)
followed by wood cutting and pickaxe skill.

Death is quietly horrible in this game. Since they get reduced by a percentage, the higher your skills, the bigger the hit you take when you die. The higher your skills, the longer they take to increase. At high levels, 1 death can set you back days in skill development. Do your best not to die.

I'm more than 700 hours in with this character.
I defeated Yagluth around day 450, then I killed some time exploring the map while waiting for the Mistlands update.
Now I have several hours into the Mistlands, and ok, I died a few times, but these skills seem way to low, am I wrong?

Did I lose so many points by dying, or is this bugged?

You must have died A Ton.
I just started anew few days ago and mine are mid 30s-40s

Nah... here is what you do:
1. Parry is your best friend's sister and your WIFE
2. Max out that padded armor (I use Fenris legs for speed)
3. 2 big HP food and 1 big stam food or you can roll with all big stam if you are a parry king.
4. Hit them bugs with Frostner until you can make that lightning polearm
5. Frost arrows and fireresist potions

Do that and you will be able to deal with them till you get that new gear crafted.

How often you died? afaik you lose 5% of your skills with every death.

Well if you died 4+ times it for sure affected them. There is a decay rate on skills via death.

I used to have woodcutting at nearly level 60. It's now around 30.

I died somewhere between 5 to 10 times, I guess...?

On a side note: I tried leveling up my skills again by constantly fighting nearby a Black Forest spawn, but the rate at which I gained skill points was super slow.
It felt like the rate gaining was at a level of 60-70, but I had only like 20 ish, if you understand.

Ok, so it seems I just died too much :-)

in debugmode, you can raise (or lower) your skills. also you might wanna try out god mode.
