the arbalest is the one true counter to gjalls, if you can get to an area with visibility and some distance you can stun lock them with the crossbow knockback and they will barely be able to fight back, often only getting a single attack in right before they die
this+ hit the big red underbelly & the crossbow will drop it in 4 shots. Any sort of viking tall terrain will block the firebomb.

Mans, you need good foods. Lox Pie and Roasted Chicken with the Salad is enough to tank 4 Gjall hits, also dodging and rolling is a thing.

They originally had two shots as well, but dealt more blunt damage. They are less destructive to constructions now, and have more damage loaded into the AoE DoT burning than direct impacts.
The big problem created by the first balance patch was that while they removed the second shot, they didn't adjust gjall's aiming AI, causing the creature to miss vast majority of its attacks due to trying to saturate an area instead of actually aiming with care. There was also noticeable delay in their action patterns and general idleness.
I wouldn't mind if they dropped something else than just bile bag, but I can't think what it should be. Blood clots? There should be no shortage of them any longer. Maybe just making the base version have 1-2 bile bags could work, but they are easy to avoid and not a common enemy so you can just leave them be unless they very rarely encroach on settlements under your protection.

Is your armor upgraded? I remember being able to eat a couple of shots before I felt like I was in danger of dying. Assuming I get hit by it anyways. You can very easily disengage for a moment to let yourself heal up enough to not die from the next hit. Just find a clear little space you can roll around in and go to town on it. i am wearing the heavy armor black metal along with the food of fish raps lox meat pies and bread. i do have a set of fenris but i take to much damage from seekers using it.

Okay so considering how they're a more uncommon enemy, you should be able to pop bonemass/fire resist whenever you have to fight one, no? I had a swamp tier bow(Obsidian arrows), blackmetal sword and padded armor and dealt with these guys pretty easily. I don't recall ever packing fire resist pots either. Is your armor upgraded? frankly after watching a couple of videos i realized what i was doing wrong.
Not scouting from above. Not preping the area to fight in. Fire resist pots or fenris armor/yagluth buff. will continue to try to do better.

You should consider bringing Fire Resist potions when you first start out in Mistlands as Gjall have indeed been made tougher with the double shot. As for the Ticks, well, you can dodgeroll to get them off you and even parry them away just before they land on you.
Consider swapping to your best 2hand mace to pop the 3 Ticks quickly.

The real problem with Gjalls is that they don't drop anything of good value. The single Bile Bag you get is worth a few bombs (I don't use bombs) and other than that it's only needed for crafting the weak/underpowered Jotun Bane axe.
The Ticks are more valuable than the Gjall cause the Blood Clots are used for some good things. I often get the Gjall low and then just parry its fireballs waiting for it to spawn Ticks a couple times for more Blood Clot farming.

well that's great for you but i am getting my butt handed to me nearly every encounter. i can't handle so many ticks and worry about the fire balls.

Hop up amongst the ydrissal shoots. It takes ticks awhile to get up there, and last I checked (could be wrong) Gjall balls can't knock the shoots down or reach you. So you can just sit up there and fire away with a bow or crossbow (or ice staff or whatever).
