You can select the item in inventory and press the action button (pretty sure it's the action button) on keyboard as well as just dragging it out with the mouse. I imagine the same on controller, select the item and press whatever the action button is?

Hmm, doesn't seem like any combination of buttons drops items. Also the r1/r2 and l1/l2 inputs have switched for me since the patch, making attack L1. Since there's no config support, it looks like the game is unplayable with controller at this time.

L Trigger hold + the [A] button at once[Xbox controller], will drop stack on ground in front of player.

Controller works fine, except for marking the Map or inputing text on Signs, or Map icons. Keyboard needed...

I use a controller + PC, game works fine, just need to use the KB for alphaNumerics.

no it will not. it will throw it. dropping is completely different.
