Troll armor is fine even in the plains as long as you say ranged or only fight one enemy at a time and know how to dodge or parry properly.
Going into a situation solo where you'll need to fight multiple enemies at once, especially in an environment where you can't keep range, such as crypts and tombs, you want something heavier that can allow you to take a few more hits. And bosses should generally be fought with heavier armor.
No star Fulings for example hit for 110, 33 less from a full troll set, so 77 points of damage if one gets a clean hit on you. With plains level food you'll currently have somewhere in the range of 200 health (subject to change with H&H) so it would take 3 hits in a short period without you healing, using potions, or anything else, to kill you.
For H&H for a rogue/ranged build you'd want to focus on Stamina foods so that you can maintain your mobility, but you'd still want enough Health so you won't get one shotted.
