The fastest maturing vs. the longest was about 2/3 of a day. I tested this several times and turnips would mature at variable times. Carrots also do this but the the shortest vs. longest were just a few minutes at most.

I've noticed this with my Turnip crops as well. Even planted as quickly as possible, some lagged behind while others finished growing much quicker. Nevertheless, I got my Turnips.

On-topic, though: I got quite lucky in my first Swamp biome. It had an ample amount of Crypts (I think it still has 2 or 3 I haven't even taken ore from yet), and also a great amount of Turnip seeds.

The next Swamp I explored, while admittedly much smaller, only had one batch of seeds I could find. (And also only one Crypt)

But, more seeds is always good.
