This game is MULTIPLAYER... There are no single player servers... They are ALL set up to accept multiple people (if the password is known). "Solo" or "single player" just means the player is playing alone on a multiplayer server, and simply not allowing others to join... But that option is always there (to let others join).

For OBVIOUS reasons, a pause function will never be part of a multiplayer situation.

THIS is actually the correct answer. The game was created with multiplayer as its core functionality it seems. If you play single player, it's just you playing solo in a MP-functioning world.

Just use a mod to pause the game.
