Sounds like one of the many problems with the most recent update. I recommend right-clicking "Valheim" in the games list in Steam, selecting "Properties", then selecting "Betas" in the list on the left and choosing "default_old" from the drop-down at the top-right.

That sequence of events seems to resolve many of the issues I've seen in the last two weeks (since the latest update). In my personal experience, it doesn't seem to have harmed my saves or characters to have run the new update for a bit and then "rolled back" in this fashion.
