When they or just about any critter is about to strike move back (they telegraph something awful) and then after they miss go in and get a hit or two. Yep, this method works for everything in the game.

You can use this on large numbers as well. I dont always want to block, so you have the stamina to hit. But I have taken on groups in the swamp, trying to eliminate those pesky spawns. and its always a skeleton spawn, and a draugr spawn.
there can be multiple starred enemies, but as long as you keep your cool, and back up, circling around, you can beat them. I like the challenge though...and the glory!
