Easy way to remember. The shield built using the ore from that zone will parry mobs / boss in that zone. Bronze buckler parries trolls, Iron buckler parries Abominations. I don't use shields anymore but when I did I always used them to parry, never to just sit there and block. In any case I would save on the mats and just go 2h + dodge.
