When fighting trolls out in the open, I find the ability you get from the deer boss to be invaluable. I just run and shoot, and try to kite them around rocks and junk. If you're fighting trolls in a cave, you can use the dodge roll which I think has i-frames? You can also just leave the cave to regen stamina. The troll in the cave will not recover any health if you step out.
