Meats have a red fork icon= More Health, less Stamina
Fruits have Yellow Forks icons=More Stamina, less Health
Vegetables and some cooked dishes have White/Silver Fork icon= Balanced (50/50) Health and Stamina gain.
Different foods yield different Health and Stamina boosts now.
Up to you to find the diet that suit your activities and playstyle.
There's a problem with stam balance though.
What you describe is how it should work, but there's something wrong with the baseline where that system is chopped at the knees.
