Life happens. It happened to you. You can fix it, but pretending you're not modded while the evidence shows that you're using BepInEx isn't helpful.

It doesn't matter what you think about your install; the fact that BepInEx is spitting messages to the console means you're running mods. BepInEx is not part of the default install, and would not be loaded if your Valheim install wasn't modded.

If you don't want to revert to the previous version (instructions in my previous comment), I recommend uninstalling Valheim, removing the Valheim folder from SteamLibrary/common, then reinstalling. That should get rid of any residual mod files, and allow you to run "clean". I don't know what mods you're running, so I have no idea what functionality you will lose (if any), but your mods are the most likely problem; they're not up-to-date with the current version of Valheim.

I'm running default_old, myself, although I play strictly vanilla; after the update, my game started crashing every time it tried to save the world, so I reverted so I can play while I wait for the Valheim devs to fix whatever shortcuts they used to "enhance performance".
