When blocking the wolves (with a shield, not a parry) are often stunned by the block ((aka knockback) and that's the time to hit them.
Iron armor would of been a better choice.
Wolves cannot climb stone walls.
Dodging uses more stamina ((I think)) than blocking.
Don't let wolves surround you, or any mob, as in IRL, keep moving in the fight.
