The OP is saying that he doesn't have enough health to survive. I didn't make that up. Clearly stamina isn't working for him.

A good stamina level allows you to mitigate incoming damage. Having a big health pool is a strategy, but at the speed it regens, i prefere going with stamina and avoid the damage completely on long fights, and deal as much damage as i can when i get an opening.
Short fights -> Health
Long fights -> Stamina

That's the way i do, seems OP does so too, but you do you, play the way you have most fun

There's alot of moving parts there. It's not obvious to me which is better. You're using alot of stamina running and dodging, rather than putting it all into hitting. You also have to keep that stamina available when hitting to be able to run/dodge, whereas, with a large health pool, you can just pound away until you have to back off due to low health.

In either case, replacing the one of the food items (I would replace carrot stew) with serpent stew would make a huge difference IMO. It's also not hard to make a run up into the mountains, get onions and make onion soup. If you're ready for bonemass, you should be ready for the mountains.
