I dont think you can do a specific time but just use Valheim Plus.

You can make it spawn way stronger enemies the way you want it. I wouldnt even play the game anymore without Valheim Plus and Epic Loot (Epic Loot also adds a bounty system etc.). And there are also great mods to improve the graphics while keeping the atmosphere.
