I love popping back into Valhiem to continue with seeds I've already started to build, but lately every bloody update breaks the game and forces me to start over. I know how to flag steam not to update until start and all, but is there a method for actually rolling back to a working build?

I feel for you. Same thing has happened to me now 3x. I just spent 3 days getting it even running again by finding a workaround.

You could try System Restore if you are using Windows to take the game back but eventually, you're going to have to update the game.

What I will suggest is that you save your character and world files on a separate file on your desktop or wherever. Sometimes you can get your world or your toon back reloading that way.
