But.. what if your horse can die?

IMHO you'd have to be pretty careful with them. Certain biomes like the swamp or mountains would be super tough on them.

And to truly take advantage of them you'd need to build a trail/road system.

Some terrain would be worse than others, but honestly most of the land is pretty flat. Also, it could be something like a stag instead, due to the mythological aspect, or something like that. I would imagine either way they'd be tamable and replaceable like any other tame.
