Use Stamina food to kill Trolls. What's the point in blocking when dodge costs little to no stamina and gives i-frames to negate all damage? Meanwhile I have so much Stamina to kill them where they stand with a Copper Knife. The sneak attack does amazing damage vs Trolls with a Knife by the way, but they adjusted their AI a bit to attack right away after being poked, so get ready to dodge right away.
