They >hear< you first then they look in your direction, then they move slowly to check whats up there, then they "lock onto you". Its a long chain of events you can brake at any point.

I dont think there is one that does it ... maybe mosquito if you are wearing the heaviest armor.

Stop jumping, that only bleeds stamina. Unequip your weapon, if you want to run you dont need to swing/shoot. And weapon slows you down hard.

Stop running. Vast majority of enemies can be walked away from. They will often swing and miss. Regen your stamina to full, walk toward some obstacles, then jump over and run away, when they are far turn before stopping, as mobs will try to run to last location they saw you.
