So it is bad optimized. Works for some, and not for me with I9 CPU, GPU rtx 3600, Ram 32, SSD and m2 disks,(tryed install the game on both) 500G/500G Ethernet.
The dedicated server lag problem has "nothing" to do with your equipment.

The internet connection? Yes - but that's the problem with peer-to-peer driven server models. If just one player has a potatoe connection, you will all notice it as soon as this player hits your area ingame.

But I confirm: Since Mistlands you have additional stuttering too (which has nothing to do with the lag problem I described), maybe caused by world save. I have an EVO Plus SSD on PCIe slot and stuttering for world save should be no issue. But everyone has this micro stuttering since Mistlands. Seems a known problem too - meanwhile.

Valheim is made with Unity. Unity itself is a construction kit tool like Photoshop. Anyone can use Photoshop to edit images, even if they don't have a clue how to take a photo. But you can master Photoshop and other people can't tell a difference / so the tool is extremely powerful in your hands and you can make a lot of money with it, even if you still never took a good picture with your camera. I would say the devs mastered Unity, but they aren't the best programmers. Maybe that could be the problem here.
