Okey first of dont get to close, they hit hard as you know, just keep moving and back tracking, and spam arrows at the ♥♥♥♥♥♥, fire is good but flint or wood also does the trick.
If you stand still you are doing it wrong, if you are trying to fight it melee you are doing it wrong, just pelt it with arrows till it dies, if you move back(back tracking) while shooting it, it will never hit you, it have too slow attack speed.

Also headshots deal extra dmg, but it can be hard to hit the head.
