It is so easy, as long as you begin to raise your shield for a block at the same time an enemy begins its attack motion, the block will result in a parry, staggering & stun-locking the enemy. While an enemy is staggered you can do up to 5x's the weapons listed damage. Hitting them with a special attack while staggered, usually results in a 1 shot kill. Clubs are a great weapon to start out with as most enemies have no resistance to blunt damage (especially skeletons & blobs).
