Trolls you deal with by shooting them with arrows while keeping distance. Troll attacks have a long windup so you can sprint out of range, shoot, then repeat.

If you aren't topped off on food they might be an issue, so Always have 3 different food buffs going on.

The new recipes unlock as you build new cooking crafting tables and have the ingredients for a new food item in your inventory.
