For things like blueberry bushes the bush can be destroyed or cut down. Don't think they will respawn after that.

Red Mushrooms and Thistle will respawn even if you dig away the dirt. Had a road I cut into a hill and the thistle on the side would grow on the slope that got cut in and the red mushrooms actually grew on the path even after is was paved.
