If you feel the game is too easy might I suggest you set rules for yourself?

Too many resources you say? Try the game the way it was orginally intended...Try no portals.

and/or Try perma-death

and/or try not allowing yourself to loot your corpses

and/or try a full play through without progressing past troll hide armor (or Root Armor).

This is how I've managed to keep myself interested in this wonderful game.
